Kacper Nosarzewski, partner at 4CF The Futures Literacy Company and board member of the Polish Society for Futures Studies, highlights that the impact of automation on business models in gastronomy has been anticipated for some time. As labor shortages emerged in this sector, the industry began experimenting with semi-automated formats.

“A sandwich- or kebab-making robot is currently a novelty, but given the current unemployment levels, automation in gastronomy definitely has a future. Especially with the growing popularity of ghost kitchens — places where customers never see the kitchen or its staff, and branding becomes abstract, as the same kitchen can serve a dozen different catering or delivery brands. This kind of consolidation and pursuit of cost synergies and innovative models is trending now. The next step is full automation of processes in such places. In the long run, I believe we may lose the skills of cooking and meal preparation due to the dynamic advancement of automation,” says Nosarzewski.

What else might surprise us? The future remains open, but one thing is certain: the HoReCa sector never stops evolving.
